Killen’s BBQ

I did the dreaded wait. Saturday morning we drove to Pearland, Texas, and waited in line for Killen’s BBQ. From walking to the back of the line, to sitting down with our food, the whole process took an hour, and it was worth it. We over-ordered (like we always do), but that makes for delicious leftovers. Our bounty: 6.5 pounds of beef ribs, 0.5 pounds of Wagyu burnt ends, 0.25 pounds of pork belly, sausage, 2 carrot cakes, 1 key lime cheesecake, 1 bread pudding, 1 quart of mac ‘n’ cheese, 1 quart of creamed corn, 1 pint of cole slaw, and a whole lot of pickles, onions, and jalapenos. Meat sweats, food coma, you name it, I had it.
